About this one
Cumin is the spice most obviously ruined by age. Fresh, it's warm and nutty and fills a room. Old, it smells faintly of dust and does very little. It's the best single test of whether a spice brand is actually selling you fresh product.
We roast cleaned whole cumin to a medium roast — dark enough to draw out the nuttiness, short of bitter — and grind it in small batches. Open the pouch and you'll know in a second whether we've done our job.
How to use it
- Excellent stirred into dal, raita, chaat and buttermilk off the heat.
- In a masala base, add it with the coriander and cook briefly.
- A pinch over roasted vegetables or grilled paneer lifts the whole plate.

Keeping it good
Store in the sealed pouch, cool and dry, away from direct sunlight. Use a dry spoon — moisture is what causes caking. Do not keep it above the stove; the heat and steam will flatten the aroma within weeks.
