About this one
Chaat masala is a finishing spice and nothing else. It goes on after cooking, never during — heat kills the volatile sulphur note in black salt that makes the whole thing work.
Ours is heavier on the amchur than most, which makes it better on fruit and on anything rich enough to need cutting through.
How to use it
- Dust over sliced fruit, especially melon, guava and green mango.
- On fried snacks, straight out of the oil while still hot.
- In raita, in a lemon soda, or over a fried egg.

Keeping it good
Store in the sealed pouch, cool and dry, away from direct sunlight. Use a dry spoon — moisture is what causes caking. Do not keep it above the stove; the heat and steam will flatten the aroma within weeks.
