Chole isn't just a curry with chickpeas in it. The flavour comes from a specific combination of sourness, darkness and depth. Get the amchur and the black salt wrong and it tastes like a generic gravy.

Ours is built around that profile: roasted coriander and cumin for the base, dried mango and pomegranate seed for the sourness, black salt for the sulphurous savoury note, and a restrained hand with the clove and cinnamon.

• Add after the tomatoes have broken down and the oil begins to separate.
• A tablespoon for a cup of dried chickpeas is a good starting point.
• Finish with lemon and fresh coriander.
